Usually I don't recommend gadgets, but this is super cool:
Mino HD camera from Flip- 200 bucks does about an hour of HD. Then you can roll it off to your PC/MAC.

Simple and great. The downside is no image stabilization, so if you have a shaky hand, you'll have a shaky hand IN HD!!!
